Description

This Cinnamon Roll Cake combines the best parts of a cinnamon roll and a cake. With a buttery, cinnamon-sugar filling swirled into a moist cake and topped with a sweet glaze, it’s the perfect dessert for breakfast, brunch, or anytime you’re craving something sweet!

For the Cake:

  • 3 cups all-purpose flour

  • 1 cup white granulated sugar

  • 4 teaspoons baking powder

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1 ½ cups milk

  • ½ cup (1 stick) salted butter, melted (slightly cooled)

For the Cinnamon Filling:

  • ¾ cup salted butter, softened to room temperature (1 ½ sticks)

  • 1 cup packed light brown sugar

  • 2 tablespoons all-purpose flour

  • 1 tablespoon ground cinnamon

For the Glaze:

  • 2 cups powdered sugar

  • 5 tablespoons milk

  • 1 teaspoon vanilla extract


Instructions

  • Prepare the Cake:
    Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
    In a large mixing bowl, whisk together the flour, granulated sugar, and baking powder. Add the eggs, vanilla extract, milk, and melted butter. Stir until the mixture is smooth and well combined.

  • Prepare the Cinnamon Filling:
    In a medium bowl, beat the softened butter, brown sugar, flour, and cinnamon until smooth and well combined. It should have a thick, spreadable consistency.

  • Layer the Cake and Filling:
    Pour the cake batter into the prepared baking dish and spread it evenly.
    Next, spoon the cinnamon filling in dollops over the top of the cake batter. Use a knife or skewer to swirl the filling into the batter, creating a marbled effect. Don’t worry if it looks messy—it will swirl during baking.

  • Bake the Cake:
    Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and slightly firm to the touch.

  • Prepare the Glaze:
    While the cake is baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and well combined. You can add more milk if the glaze is too thick.

  • Glaze the Cake:
    Once the cake has finished baking and is slightly cooled, drizzle the glaze evenly over the top.

 

  • Serve and Enjoy:
    Slice the cake into squares and serve. Enjoy the warm, cinnamon-sugar goodness with a delicious glaze!

  • The cake is best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2-3 days.
