These Air Fryer Stuffed Chicken Rolls are packed with creamy, cheesy filling and then crisped to perfection in the air fryer. With a delightful combination of mozzarella, cream cheese, corn, green chilis, and spices, these chicken rolls make for a flavorful and easy meal that’s perfect for any night of the week.

  • 4 large chicken breasts, cut ¾ way through horizontally, then pounded flat into large pieces
  • 8 slices mozzarella cheese
  • 1 cup canned corn, drained
  • 8 oz cream cheese
  • 1 tablespoon minced garlic
  • 4 oz green chilis
  • 1 cup Mexican cheese blend, shredded
  • ¼ cup cilantro, chopped
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup all-purpose flour
  • 2 eggs, well beaten
  • 2 cups breadcrumbs

Instructions

  • Preheat your air fryer to 375°F (190°C).
  • In a mixing bowl, combine the cream cheese, minced garlic, green chilis, shredded Mexican cheese blend, chopped cilantro, salt, and pepper. Stir until fully combined.
  • Lay each chicken breast flat and place two slices of mozzarella cheese in the center of each. Spoon a generous amount of the cream cheese mixture on top of the mozzarella slices.
  • Carefully roll up each chicken breast around the filling and secure with toothpicks if necessary.
  • Dredge each chicken roll in flour, making sure it is evenly coated. Dip it in the beaten eggs, then coat it in breadcrumbs, pressing gently to ensure it sticks.
  • Place the stuffed and breaded chicken rolls in the air fryer basket in a single layer, ensuring they aren’t touching.
  • Air fry the chicken rolls for 18-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the coating is golden and crispy.
  • Remove the toothpicks (if used), serve, and garnish with additional cilantro, if desired.

Notes

  • If you prefer a spicier kick, you can add jalapeños or a pinch of cayenne pepper to the filling.
  • Make sure to pound the chicken breasts thin to ensure they cook evenly and roll up easily.
  • You can also make these stuffed chicken rolls in the oven by baking at 375°F (190°C) for 25-30 minutes.
