- ½ cup granulated white sugar
- ¼ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup all-purpose flour (spooned and leveled)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the almond butter, granulated sugar, brown sugar, egg, and vanilla extract. Stir until smooth and well combined.
- Add the baking soda, salt, and flour to the bowl, and mix until everything is incorporated into a dough.
- Use a spoon to scoop out tablespoon-sized portions of dough and roll them into balls. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each dough ball slightly with the back of a fork or your fingers.
- Bake in the preheated oven for 8-10 minutes, or until the edges of the cookies are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- If you prefer a softer cookie, bake for the shorter end of the time range.
