These Almond Butter Cookies are simple, rich, and irresistibly delicious! With just a few basic ingredients, these cookies have a soft texture and a nutty almond flavor that’s sure to satisfy your sweet tooth. Perfect for snacking or dessert!


Ingredients

  • 1 cup almond butter
  • ½ cup granulated white sugar
  • ¼ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup all-purpose flour (spooned and leveled)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, combine the almond butter, granulated sugar, brown sugar, egg, and vanilla extract. Stir until smooth and well combined.
  • Add the baking soda, salt, and flour to the bowl, and mix until everything is incorporated into a dough.
  • Use a spoon to scoop out tablespoon-sized portions of dough and roll them into balls. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each dough ball slightly with the back of a fork or your fingers.
  • Bake in the preheated oven for 8-10 minutes, or until the edges of the cookies are golden brown.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • If you prefer a softer cookie, bake for the shorter end of the time range.
  • You can add chocolate chips, chopped nuts, or a sprinkle of sea salt on top before baking for extra flavor and texture.
