Description
Amish Milk Bread is a soft, slightly sweet, and fluffy white bread perfect for sandwiches, toast, or just with butter. This classic recipe creates a light, airy loaf with a delicious flavor. Whether using a stand mixer or kneading by hand, the result is always comforting and perfect for family meals.
Ingredients

- 1 cup water (110°F)
- 1 pinch powdered ginger (optional)
- 1 cup milk (110°F)
- 2/3 cup sugar
- 1 ½ tablespoons active dry yeast
- 1 ½ teaspoons salt
- 1/4 cup vegetable oil (or coconut oil, or melted butter)
- 5 ½ cups bread flour
- 2 tablespoons butter (melted)
Instructions
Conventional Method:
- Dissolve the sugar in warm water and milk.
- Whisk in the yeast and ginger (if using). Let sit for 5-10 minutes until the mixture becomes foamy.
- Stir in 1 cup of flour.
- Whisk in salt and oil.
- With a mixer, add the remaining flour one cup at a time until the dough pulls away from the bowl.
- Knead with the machine for about 5 minutes.
Hand Kneading Method:
- Mix in flour until the dough becomes sticky.
- Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic. Add flour as needed.
Rising and Shaping:
- Oil a large bowl and place the dough in it. Oil the top of the dough and cover with a damp cloth.
- Let the dough rise until doubled in size, about 1 hour.
- Punch down the dough and knead it for 3 minutes. Divide the dough in half and let rest for 5 minutes.
- Shape the dough into loaves and place them in greased 9×5 inch loaf pans. Brush the tops with melted butter.
- Let the dough rise for 30 minutes until the dough has risen about an inch above the pans.
- Bake at 350°F for 30 minutes until the loaves sound hollow when tapped or an instant-read thermometer registers 190°F in the center.
For a Soft Crust:
- Butter the tops of the loaves and place a clean tea towel over the loaves when you remove them from the oven.
- Let the bread cool for 5 minutes, then remove from the pans and finish cooling, covered with the tea towel.
Bread Machine Instructions:
- Add the ingredients in the order recommended by the bread machine manufacturer.
- Select the white bread cycle and press start.
- When the dough has risen once and the second kneading cycle begins, turn the machine off and then press start again to reset.
- The dough will rise a second time before baking.
Notes
- Storage: Store wrapped in plastic wrap or aluminum foil for up to 2 days at room temperature. For longer storage, freeze the bread.
- If you prefer a less sweet bread, reduce the sugar by half. The texture may change, but it will still be delicious.
- Coconut oil can be used instead of butter for added flavor. Light vegetable oil works as well.
- Use melted and cooled oil (about 100°F).
