  • 3 cups cooked chicken, diced or shredded
  • 3 cups cooked rice
  • ½ cup butter, room temperature and cubed
  • 8 ounces cream cheese, room temperature and cubed
  • 10.5 ounces cream of chicken soup
  • 3 cloves garlic, minced
  • 0.7 ounce Italian dressing mix (e.g., Good Seasons)
  • 1 cup chicken stock
  • 2 cups shredded Colby Jack cheese, divided use
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the cooked chicken, cooked rice, cream cheese, butter, cream of chicken soup, garlic, Italian dressing mix, chicken stock, and 1 cup of shredded Colby Jack cheese. Stir until everything is well combined.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
  • Sprinkle the remaining 1 cup of shredded Colby Jack cheese on top of the casserole.
  • Bake for 25-30 minutes or until the casserole is hot and bubbly and the cheese is melted and slightly golden.
  • Garnish with fresh parsley before serving.

Notes

  • You can use any type of cheese you prefer, but Colby Jack adds a nice balance of creamy and mild flavor.
  • For extra richness, you can add more cream cheese or even a bit of sour cream to the mixture.
