Instructions

Preheat the Oven:
Preheat your oven to 400°F (200°C). -
Prepare the Vegetables:
In a medium baking dish (8×8-inch or similar), combine the cherry or grape tomatoes, diced red bell pepper, diced red onion, and minced garlic. Drizzle with 2 tablespoons of olive oil, and season with oregano, thyme, sea salt, black pepper, and red pepper flakes. Toss everything to combine and spread it evenly in the dish. -
Add the Feta Cheese:
Place the block of feta cheese in the center of the baking dish. Drizzle the remaining 2 tablespoons of olive oil over the top of the feta cheese. -
Bake the Vegetables and Feta:
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the vegetables are soft and the feta cheese has softened and slightly browned around the edges. -
Add Spinach:
Once the feta and vegetables are done, remove the dish from the oven and sprinkle the chopped baby spinach over the vegetables and feta. Give it a quick stir to mix the spinach into the vegetables. -
Create Wells for Eggs:
Using a spoon, create four small wells in the vegetable and feta mixture. Crack an egg into each well, being careful not to break the yolks. -
Bake the Eggs:
Return the dish to the oven and bake for an additional 8-10 minutes, or until the egg whites are set but the yolks are still runny (or bake longer if you prefer your eggs more well done).
