Description

This baked feta pasta is a simple, creamy, and delicious dish made with roasted grape tomatoes and feta cheese, combined with fresh basil and served over warm pasta. A comforting and flavorful meal that’s perfect for weeknights!


Ingredients

  • 2 ½ cups grape tomatoes, washed and dried
  • 1 (8 oz) block of Feta cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 5 tablespoons olive oil
  • ¼ cup chopped fresh basil
  • 12 oz bow tie pasta, cooked, drained, and kept warm

Instructions

  • Preheat the oven: Preheat your oven to 400°F (200°C).
  • Prepare the baking dish: In a large baking dish, place the grape tomatoes and the block of feta cheese in the center.
  • Season: Drizzle the olive oil over the tomatoes and feta, then sprinkle with Italian seasoning and salt. Toss the tomatoes slightly to coat them in the oil and seasoning, but leave the feta block intact in the center.
  • Bake: Place the dish in the oven and bake for 30-35 minutes, or until the tomatoes are softened and burst, and the feta cheese is golden and slightly browned.
  • Prepare the pasta: While the feta and tomatoes are baking, cook the bow tie pasta according to the package directions. Drain the pasta and keep it warm.
  • Combine: Once the baking is complete, remove the dish from the oven. Use a fork to gently mash the feta and tomatoes together, creating a creamy sauce. Add in the chopped fresh basil and mix well.
  • Serve: Pour the creamy feta and tomato mixture over the cooked pasta. Toss to combine and coat the pasta with the sauce. Serve immediately.

Notes

  • You can substitute bow tie pasta with any pasta shape you prefer, such as penne, rigatoni, or spaghetti.
  • For a richer flavor, you can add a bit more olive oil or a sprinkle of Parmesan cheese when serving.
  • If you like more garlic flavor, you can add minced garlic to the baking dish before roasting.
