  • 1 cup (232g) mayonnaise
  • ½ cup (132g) Thai sweet chili sauce
  • 1 teaspoon Sriracha, or more to taste
  • 2 tablespoons honey
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup (245g) buttermilk
  • ¾ cup (94g) all-purpose flour
  • ½ cup (64g) cornstarch
  • 1 large egg, room temperature
  • 1 tablespoon Sriracha
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper, optional
  • 2 cups (216g) panko breadcrumbs, plain
  • Canola oil, for frying
  • Chopped parsley, for garnish

Instructions

  • Prepare the Bang Bang Sauce:

    • In a small bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Mix well and set aside.
  • Coat the Chicken:

    • In a medium mixing bowl, add buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, pepper, and cayenne pepper (if using). Whisk to combine.
    • Add the chicken tenderloins and toss to coat evenly.
  • Bread the Chicken:

    • Place panko breadcrumbs on a shallow plate.
    • Remove each chicken tender from the batter, shaking off excess, and dredge in the panko, pressing gently to ensure it sticks.
    • Set the breaded chicken on a clean plate and repeat with remaining pieces.
  • Fry the Chicken:

    • Heat about 1 inch of canola oil in a large skillet over medium-high heat until it reaches 365°F.
    • Working in batches, add chicken to the hot oil, careful not to overcrowd the pan. Fry for 2-3 minutes per side or until golden brown and cooked through (internal temperature should be 165°F).
    • Transfer the fried chicken to a paper towel-lined plate to drain.
  • Serve:

    • Toss the fried chicken in the prepared Bang Bang sauce until evenly coated.
    • Garnish with chopped parsley and serve warm.

Notes

  • For extra heat, increase the amount of Sriracha or add a pinch of cayenne pepper.
  • Make sure the oil is at the correct temperature to achieve the perfect crispness on the chicken.
