Ingredients
Scale
- 1 ½ pounds thin sliced chicken breasts
- Kosher salt, fresh black pepper, and garlic powder (for seasoning)
- ½ cup flour
- ¼ cup cornstarch
- 1 cup buttermilk
- 1 tablespoon hot sauce
- 1 large egg
- 2 cups (or more as needed) Panko bread crumbs
- Vegetable or canola oil for frying
- 12 slices mozzarella cheese
- 12 slider rolls
- Bang Bang Sauce (see notes below for sauce ingredients)
Instructions
- Season the chicken breasts with kosher salt, black pepper, and garlic powder. Cut them into smaller pieces or strips that will fit on the slider rolls.
- In a shallow bowl, combine the flour and cornstarch. In another bowl, whisk together the buttermilk, hot sauce, and egg.
- Dip each piece of chicken into the flour mixture, then the buttermilk mixture, and finally coat them in Panko bread crumbs. Make sure the chicken is fully coated.
- Heat vegetable or canola oil in a deep pan or skillet over medium-high heat. Once the oil is hot, fry the breaded chicken pieces in batches for 3-4 minutes per side or until golden brown and cooked through.
- Remove the chicken from the oil and drain on a paper towel-lined plate.
- Place a slice of mozzarella cheese on each piece of hot chicken and let it melt while you assemble the sliders.
- Toast the slider rolls in the same skillet or on a separate pan, if desired.
- To assemble the sliders, place the crispy chicken with melted cheese on the bottom half of each slider roll. Drizzle with the Bang Bang Sauce (recipe below) and top with the other half of the roll.
- Serve the sliders warm, and enjoy!
Bang Bang Sauce
- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (or adjust to your spice preference)
- 1 teaspoon rice vinegar
Notes
- You can make the Bang Bang Sauce ahead of time and store it in the refrigerator for a few days.
- If you prefer a milder version, reduce the amount of hot sauce or sriracha in the sauce.
- Serve with pickles or coleslaw for added crunch and flavor!
