Description

These Basic Cauliflower Fritters are a quick and tasty low-carb snack or side dish. Made with cauliflower rice, cheddar cheese, and almond flour, they’re crispy on the outside, tender inside, and packed with flavor.


Ingredients

  • 2.5 cups cauliflower rice (fresh or frozen, thawed)

  • 2/3 cup shredded cheddar cheese

  • 1/4 cup almond flour

  • 2 large eggs, unbeaten

  • 1 scallion, thinly sliced

  • 2 tablespoons butter

  • 1/2 teaspoon table salt

  • 1/4 teaspoon ground black pepper


Instructions

  • In a large bowl, combine cauliflower rice, shredded cheddar cheese, almond flour, unbeaten eggs, sliced scallion, salt, and black pepper. Mix well until fully combined.

  • Heat butter in a large skillet over medium heat.

  • Scoop about 1/4 cup of the mixture per fritter and carefully drop into the skillet, flattening slightly with a spatula.

  • Cook fritters for 3–4 minutes on each side, or until golden brown and cooked through. Avoid overcrowding the pan.

  • Remove from skillet and drain on paper towels if desired.

  • Serve warm as a side dish or snack.

Notes

  • For a firmer texture, let the mixture rest 5 minutes before cooking to allow almond flour to absorb moisture.

  • You can substitute almond flour with coconut flour (use less coconut flour, about 2 tablespoons).
