These Basic Cauliflower Fritters are a quick and tasty low-carb snack or side dish. Made with cauliflower rice, cheddar cheese, and almond flour, they’re crispy on the outside, tender inside, and packed with flavor.
Ingredients

2.5 cups cauliflower rice (fresh or frozen, thawed)

2/3 cup shredded cheddar cheese

1/4 cup almond flour

2 large eggs, unbeaten

1 scallion, thinly sliced

2 tablespoons butter

1/2 teaspoon table salt

1/4 teaspoon ground black pepper
Instructions

In a large bowl, combine cauliflower rice, shredded cheddar cheese, almond flour, unbeaten eggs, sliced scallion, salt, and black pepper. Mix well until fully combined.

Heat butter in a large skillet over medium heat.

Scoop about 1/4 cup of the mixture per fritter and carefully drop into the skillet, flattening slightly with a spatula.

Cook fritters for 3–4 minutes on each side, or until golden brown and cooked through. Avoid overcrowding the pan.

Remove from skillet and drain on paper towels if desired.

For a firmer texture, let the mixture rest 5 minutes before cooking to allow almond flour to absorb moisture.
