Description

These Blackstone Loaded Smashed Potatoes are crispy, savory, and full of flavor. Baby potatoes are smashed, then cooked to perfection with garlic, olive oil, and butter, topped with melted cheddar cheese, crispy bacon bits, and optional sour cream. A delicious side dish that’s perfect for any meal!

  • 2 pounds baby potatoes

  • 2 tablespoons butter

  • 3 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon sea salt

  • 1 cup shredded cheddar cheese

  • 1/2 cup bacon bits

Optional Toppings

  • Sour cream

  • Chopped fresh parsley or chives (for garnish)


Instructions

  • Prepare the Potatoes:
    Bring a large pot of salted water to a boil. Add the baby potatoes and cook for 12-15 minutes, or until tender when pierced with a fork. Drain and set aside to cool slightly.

  • Smash the Potatoes:
    Once the potatoes are cool enough to handle, gently smash each one with the bottom of a glass or a potato masher until slightly flattened.

  • Cook the Potatoes:
    Preheat your Blackstone griddle or large skillet over medium heat.
    Add the olive oil and butter to the griddle and let it melt. Once melted, place the smashed potatoes on the griddle.
    Sprinkle with garlic powder and sea salt. Cook for 5-7 minutes per side, or until they are golden brown and crispy.

  • Add the Toppings:
    Once the potatoes are crispy and cooked, sprinkle the shredded cheddar cheese on top of each one and cook for an additional 2 minutes until the cheese is melted.

  • Serve:
    Transfer the loaded smashed potatoes to a serving dish and top with bacon bits. If desired, add a dollop of sour cream and garnish with chopped parsley or chives.

Notes

  • For an extra cheesy touch, use a mix of shredded cheddar and Monterey Jack cheese.
