  • 2 Tablespoons butter

    • Sour cream

Instructions

  • Cook the Potatoes: Start by boiling the baby potatoes in salted water until they are fork-tender, about 15-20 minutes. Drain the potatoes and set them aside to cool slightly.

  • Smash the Potatoes: Once the potatoes are cool enough to handle, use a fork or potato masher to smash each potato into a flat disk.

  • Cook the Potatoes on the Blackstone: Preheat your Blackstone griddle. Add olive oil and butter to the griddle, then place the smashed potatoes onto the hot surface. Cook for about 3-4 minutes per side, until golden and crispy.

  • Add the Toppings: Once the potatoes are crispy, sprinkle shredded cheddar cheese and bacon bits on top. Allow the cheese to melt and the bacon to heat up.
