Description

Ingredients

  • 2 cups cottage cheese
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups rolled oats
  • 2 teaspoons baking powder
  • 1 1/2 cups fresh or frozen blueberries (reserve some for topping)

Instructions

  • Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  • In a large bowl, whisk together cottage cheese, eggs, milk, maple syrup or honey, vanilla extract, cinnamon, and salt.
  • Stir in the oats and baking powder.
  • Gently fold in the blueberries, reserving some for topping.
  • Pour the mixture into the prepared dish and spread evenly. Top with the reserved blueberries.
  • Bake for 30-35 minutes or until set and lightly golden.
  • Cool for 5-10 minutes before slicing. Serve warm.

Notes

  • You can substitute raspberries or chopped strawberries for blueberries if preferred.
