- 2 cups cottage cheese
- 2 eggs
- 1/2 cup milk
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 cups rolled oats
- 2 teaspoons baking powder
- 1 1/2 cups fresh or frozen blueberries (reserve some for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- In a large bowl, whisk together cottage cheese, eggs, milk, maple syrup or honey, vanilla extract, cinnamon, and salt.
- Stir in the oats and baking powder.
- Gently fold in the blueberries, reserving some for topping.
- Pour the mixture into the prepared dish and spread evenly. Top with the reserved blueberries.
- Bake for 30-35 minutes or until set and lightly golden.
- Cool for 5-10 minutes before slicing. Serve warm.
Notes
- You can substitute raspberries or chopped strawberries for blueberries if preferred.
- Add chopped nuts, like almonds or walnuts, for extra flavor and texture.
