Description

This refreshing breakfast fruit salad is packed with a variety of colorful, nutrient-rich fruits and a creamy, sweet yogurt sauce. Perfect for a healthy breakfast or as a side dish, it’s bursting with natural sweetness and crunchy pecans for added texture. The yogurt sauce adds a creamy and slightly sweet touch that ties everything together.

For the Fruit Salad:

  • 1 cup strawberries, washed and cut into bite-sized pieces

  • 1 cup green grapes, washed and halved

  • 1 cup red grapes, washed and halved

  • 1 cup blueberries, washed

  • 1 apple, washed, cored, peeled, and diced

  • 1 banana, peeled and sliced

  • 1/4 cup pecans, chopped

For the Yogurt Sauce:

  • 1 cup plain Greek yogurt

  • 12 tablespoons honey (to taste)

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon almond extract


Instructions

  • Prepare the Fruit Salad:
    In a large mixing bowl, combine the strawberries, green grapes, red grapes, blueberries, apple, banana, and chopped pecans. Gently toss the fruit to mix evenly.

  • Make the Yogurt Sauce:
    In a separate bowl, whisk together the plain Greek yogurt, honey, vanilla extract, and almond extract until smooth and well-combined. You can adjust the amount of honey based on your sweetness preference.

 

  • Combine and Serve:
    Pour the yogurt sauce over the fruit mixture and gently toss to coat the fruit evenly.
    Serve immediately, or refrigerate for 30 minutes for a chilled version. Enjoy!

Notes

  • Feel free to substitute or add any other fruits like oranges, kiwi, or pineapple for more variety.

  • You can use flavored Greek yogurt if you prefer, but plain yogurt keeps it lighter and lets the honey and extracts shine.
