Description

These Breakfast Taquitos are a quick and easy breakfast option packed with savory sausage, scrambled eggs, and melted cheese, all rolled up in soft tortillas. Perfect for a busy morning or for meal prep, these taquitos are deliciously satisfying and can be enjoyed with a side of salsa or guacamole!


Ingredients

  • 7-ounce box fully cooked sausage links

  • 5 large eggs

  • Salt and freshly ground black pepper, to taste

  • 1 ½ cups shredded cheese (your favorite kind)

  • 10 white corn tortillas (or use 6” flour tortillas)


Instructions

  • Prepare the Sausage: Heat the fully cooked sausage links according to package instructions (usually in the microwave or by pan-frying). Once heated, slice the sausage links into bite-sized pieces.

  • Scramble the Eggs: Crack the 5 eggs into a bowl, add salt and pepper, and whisk until fully combined. Heat a non-stick skillet over medium heat, then add the eggs and scramble until fully cooked and fluffy.

  • Assemble the Taquitos: Warm the tortillas in the microwave for about 20-30 seconds to make them more pliable. On each tortilla, layer a few pieces of sausage, a spoonful of scrambled eggs, and a sprinkle of shredded cheese.

  • Roll the Taquitos: Roll up each tortilla tightly to form a taquito. Place the rolled taquitos seam-side down on a baking sheet.

  • Bake: Preheat your oven to 375°F (190°C). Bake the taquitos for 10-12 minutes, or until they are golden and crispy.

 

  • Serve: Serve warm with your favorite dipping sauce, such as salsa or guacamole.

Notes

  • If you prefer crispy taquitos, you can lightly spray them with cooking spray before baking.

  • These are great for meal prep! You can store them in the fridge for a few days or freeze them for up to a month. Just reheat in the oven or microwave.
