Description

Cauliflower toast is a low-carb, gluten-free, and nutrient-packed alternative to traditional bread.   • 1/4 cup grated parmesan cheese

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Fresh herbs or seasonings (optional, for extra flavor)


Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C).

  • Prepare the Cauliflower: In a food processor, pulse the cauliflower florets until they resemble rice-sized pieces. If you don’t have a food processor, you can grate the cauliflower by hand using a box grater.

  • Cook the Cauliflower Rice: Place the processed cauliflower into a microwave-safe bowl and microwave for about 5 minutes, or until soft. Alternatively, sauté the cauliflower in a pan with olive oil for 5-7 minutes. Allow it to cool slightly.

  • Mix the Ingredients: Once the cauliflower has cooled, transfer it to a clean dish towel or cheesecloth and wring out any excess moisture. In a large bowl, combine the cauliflower rice with egg, parmesan, almond flour, garlic powder, salt, and pepper.

  • Shape the Toasts: Line a baking sheet with parchment paper or a silicone baking mat. Divide the cauliflower mixture into portions and shape them into small “toast” shapes, about 1/4 to 1/2 inch thick.

  • Bake: Bake the cauliflower toasts for 15-20 minutes, flipping halfway through, until golden and crisp on the edges.

  • Add Toppings: Once the toasts are done, remove them from the oven. Top with your favorite toppings like scrambled eggs, avocado, or roasted vegetables. Drizzle with olive oil or hot sauce for extra flavor.
