  • 3 lbs large fresh strawberries
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar

  • 1 ½ cups heavy whipping cream, cold
  • ¼ cup graham cracker crumbs

Instructions

  • Prep Strawberries:
    • Slice the strawberries lengthwise, keeping the stems attached.
    • Cut a tiny slice off the bottom of each strawberry so they sit flat.
    • Carve a small hollow in the center of each strawberry using a melon baller.
  • Make the Filling:
    • Whip the heavy cream until stiff peaks form (about 3-4 minutes).
    • Beat the cream cheese, powdered sugar, and vanilla extract until fluffy.
    • Gently fold the whipped cream into the cream cheese mixture.
  • Assemble:
    • Fill a piping bag with the cheesecake mixture.
    • Pipe the mixture generously into the hollowed-out strawberries.
    • Sprinkle with graham cracker crumbs.
  • Chill:
    • Refrigerate for 1 hour before serving to allow the filling to set.

Notes

  • You can make these a day ahead, but they taste best when served fresh.
