For the Berries:
- 3 lbs large fresh strawberries
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups heavy whipping cream, cold
- ¼ cup graham cracker crumbs
Instructions
- Prep Strawberries:
- Slice the strawberries lengthwise, keeping the stems attached.
- Cut a tiny slice off the bottom of each strawberry so they sit flat.
- Carve a small hollow in the center of each strawberry using a melon baller.
- Make the Filling:
- Whip the heavy cream until stiff peaks form (about 3-4 minutes).
- Beat the cream cheese, powdered sugar, and vanilla extract until fluffy.
- Gently fold the whipped cream into the cream cheese mixture.
- Assemble:
- Fill a piping bag with the cheesecake mixture.
- Pipe the mixture generously into the hollowed-out strawberries.
- Sprinkle with graham cracker crumbs.
- Chill:
- Refrigerate for 1 hour before serving to allow the filling to set.
Notes
- You can make these a day ahead, but they taste best when served fresh.
- If you prefer a lighter filling, you can reduce the amount of cream cheese or substitute half with Greek yogurt.
- To make them extra festive, drizzle some melted chocolate over the top after adding the graham cracker crumbs.
