Golden, crispy on the outside and creamy inside, these cheesy mashed potato puffs are the perfect savory snack or side dish. Packed with Monterey Jack cheese and fresh chives, they’re easy to make and irresistible. Serve warm with a dollop of sour cream for extra indulgence.

3 eggs, beaten

2 cups mashed potatoes, at room temperature

1 cup shredded Monterey Jack cheese, divided

¼ cup finely chopped fresh chives, plus extra for garnish

Salt and pepper, to taste

Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

In a large bowl, combine mashed potatoes, beaten eggs, ¾ cup shredded Monterey Jack cheese, chopped chives, salt, and pepper. Mix well until smooth and uniform.

Using a spoon or small ice cream scoop, form the mixture into 12 equal-sized puffs and place on the prepared baking sheet.

Sprinkle the remaining ¼ cup Monterey Jack cheese evenly over the tops of the puffs.

Bake for 20–25 minutes, or until golden brown and crispy on the outside.

Remove from oven and let cool slightly before serving. Garnish with additional chopped chives.
