These cheesy ranch oven roasted potatoes are crispy on the outside, soft on the inside, and packed with bold flavor. Tossed with ranch seasoning and garlic powder, then topped with melted cheddar cheese, they make a perfect side dish for any meal.
Ingredients

3 large russet potatoes, diced

2 tablespoons olive oil

3 tablespoons ranch seasoning mix

1 cup shredded cheddar cheese

Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Wash and dice the potatoes into bite-sized cubes.

In a large bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, salt, and pepper until evenly coated.

Spread the potatoes in a single layer on the baking sheet.

Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy.

Remove from oven and sprinkle cheddar cheese evenly over the potatoes.

Return to the oven for 5 minutes, or until cheese is melted and bubbly.
