Description
This Chicken Caesar Pasta Salad combines the rich, creamy flavors of a classic Caesar salad with the heartiness of pasta and tender chicken. Tossed in a homemade dressing, this salad is perfect as a side or a light meal for any occasion.
Ingredients
For the Dressing:

2 teaspoons Dijon mustard

2 tablespoons fresh lemon juice

2 teaspoons Worcestershire sauce

¾ cup mayonnaise

2 teaspoons minced garlic

1 teaspoon anchovy paste

⅓ cup finely grated Parmesan cheese
For the Pasta Salad:

8 oz uncooked pasta (such as rotini or penne)

2 hearts of Romaine lettuce, chopped

Shredded rotisserie chicken or chopped chicken breasts (about 2 cups)

Croutons (optional)

Parmesan cheese, for serving
Instructions

Prepare the Dressing: In a medium bowl, whisk together the Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, minced garlic, anchovy paste, and grated Parmesan cheese. Taste and adjust seasoning with salt and pepper if needed. Set aside.

Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside to cool slightly.

Assemble the Salad: In a large bowl, combine the cooked pasta, chopped Romaine lettuce, and shredded or chopped chicken.

Toss with Dressing: Pour the prepared dressing over the salad and toss until everything is well coated.
- Serve: Top with croutons (if desired) and extra Parmesan cheese. Serve immediately or refrigerate until ready to serve.

For added flavor, you can grill the chicken breasts before chopping them up.
