Ingredients
Scale
- Cooking spray
- 2 large eggs
- 1/4 cup vegetable oil
- 4 tablespoons unsalted butter, melted
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1 1/4 cups sugar
- 3/4 cup all-purpose flour
- 2/3 cup cocoa powder
- 1/2 cup confectioners’ sugar
- 1/2 teaspoon kosher salt
- 1/2 cup chocolate chips or chunks
- 3 cups strawberries, stems removed
- Chocolate melting wafers (or melted chocolate chips as a substitute)
Instructions
- Preheat the oven: Set your oven to 325°F (165°C). Line an 8-inch square baking pan with parchment paper, then grease the paper with cooking spray.
- Mix the wet ingredients: In a large bowl, whisk together the eggs, vegetable oil, melted butter, water, and vanilla extract until fully combined.
- Prepare the dry ingredients: In a separate medium bowl, whisk together the sugar, flour, cocoa powder, confectioners’ sugar, and salt.
- Combine wet and dry ingredients: Add the dry ingredients to the wet ingredients and mix just until combined. Do not overmix.
- Add chocolate chips: Fold in the chocolate chips or chunks to the batter.
- Bake: Pour the batter into the prepared baking pan. Bake for 35 to 40 minutes, or until the brownies are just set in the center and a toothpick inserted comes out clean. Remove from the oven and allow the brownies to cool completely in the pan.
- Top with strawberries: Once the brownies have cooled, arrange the strawberries on top, cut side down.
- Drizzle with chocolate: Melt the chocolate wafers according to the package instructions (or melt chocolate chips if using) and drizzle it over the strawberries. Let the chocolate firm up before slicing the brownies.
- Serve: Once the chocolate drizzle is set, slice the brownies and serve.
Notes
- You can use any type of chocolate for the drizzle, but melting wafers give a smooth, glossy finish.
- If you prefer a richer chocolate flavor, try adding a bit of espresso powder to the batter.
- For a fun twist, try dipping the strawberries in chocolate before placing them on top of the brownies.
