Ingredients
Scale
- 1 ½ cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tablespoons coconut oil
Instructions
-
Prepare the Yogurt Mixture:
- In a medium bowl, mix the Greek yogurt, honey, and vanilla extract until smooth and well combined.
-
Combine the Strawberries:
- Gently fold the chopped strawberries into the yogurt mixture. Be careful not to crush the berries too much.
-
Prepare the Chocolate:
- In a microwave-safe bowl, melt the semi-sweet chocolate chips with the coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is smooth and fully melted.
-
Assemble the Clusters:
- Line a baking sheet with parchment paper.
- Using a spoon, scoop small dollops of the yogurt-strawberry mixture onto the baking sheet. Drizzle the melted chocolate over the top of each cluster.
-
Freeze:
- Place the baking sheet in the freezer and let the clusters freeze for at least 2 hours or until fully set.
-
Serve:
- Once frozen, remove the clusters from the baking sheet and serve immediately or store in an airtight container in the freezer.
Notes
- You can add additional toppings to the yogurt mixture such as nuts, seeds, or granola for extra crunch.
- For a different flavor, try substituting the strawberries with raspberries or blueberries.
