Ingredients

  • 1 ½ cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons coconut oil

Instructions

  • Prepare the Yogurt Mixture:

    • In a medium bowl, mix the Greek yogurt, honey, and vanilla extract until smooth and well combined.
  • Combine the Strawberries:

    • Gently fold the chopped strawberries into the yogurt mixture. Be careful not to crush the berries too much.
  • Prepare the Chocolate:

    • In a microwave-safe bowl, melt the semi-sweet chocolate chips with the coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is smooth and fully melted.
  • Assemble the Clusters:

    • Line a baking sheet with parchment paper.
    • Using a spoon, scoop small dollops of the yogurt-strawberry mixture onto the baking sheet. Drizzle the melted chocolate over the top of each cluster.
  • Freeze:

    • Place the baking sheet in the freezer and let the clusters freeze for at least 2 hours or until fully set.
