Fresh Corn Salsa

  • 2 cups fresh corn kernels

  • ¼ cup chopped cilantro

  • 2 tablespoons minced red onion

  • 1 tablespoon lime juice

  • 1 teaspoon lime zest

  • 1 teaspoon olive oil

  • 1 teaspoon cilantro lime seasoning (JBJ Soul Seasoning brand recommended)

  • ¼ teaspoon kosher salt

Chicken

  • 4 boneless skinless chicken breasts

  • 1 tablespoon cilantro lime seasoning (JBJ Soul Seasoning brand recommended)

  • 1 tablespoon olive oil


Instructions

  • Prepare the fresh corn salsa by combining corn kernels, chopped cilantro, minced red onion, lime juice, lime zest, olive oil, cilantro lime seasoning, and kosher salt in a bowl. Mix well and set aside to let flavors meld.

  • Rub the chicken breasts evenly with the cilantro lime seasoning and olive oil.

  • Heat a grill or skillet over medium-high heat. Cook the chicken breasts for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.

  • Remove the chicken from heat and let rest for a few minutes.

  • Serve the chicken topped or alongside the fresh corn salsa.

Notes

  • For extra flavor, marinate the chicken in the seasoning and oil for 30 minutes before cooking.

  • Fresh corn can be substituted with thawed frozen corn in a pinch.
