Prepare the fresh corn salsa by combining corn kernels, chopped cilantro, minced red onion, lime juice, lime zest, olive oil, cilantro lime seasoning, and kosher salt in a bowl. Mix well and set aside to let flavors meld.

Rub the chicken breasts evenly with the cilantro lime seasoning and olive oil.
