Description

Cinnamon Roll Poke Cake is the perfect fusion of a soft vanilla cake and the warm, gooey flavors of a classic cinnamon roll. With a sweet cinnamon-butter filling seeping into every bite and a luscious cream cheese frosting on top, this easy dessert is rich, indulgent, and guaranteed to be a crowd-pleaser.

Ingredients

Scale

For the Cake:

  • 1 box vanilla cake mix

  • Ingredients called for on the box (typically eggs, oil, and water)

For the Filling:

  • 1 (14 oz) can sweetened condensed milk

  • 4 tablespoons melted salted butter

  • 1/2 cup packed brown sugar

  • 2 teaspoons ground cinnamon

For the Frosting:

  • 1/2 block (4 oz) cream cheese, softened

  • 1/3 cup butter, softened

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract

  • 1 tablespoon heavy cream or milk

Optional Topping:

  • Cinnamon sugar, for sprinkling

Instructions

  • Preheat oven and prepare the cake mix according to package instructions. Bake in a 9×13-inch pan until a toothpick inserted in the center comes out clean.

  • While the cake is still warm, use the handle of a wooden spoon to poke holes evenly across the surface.

  • In a bowl, whisk together the sweetened condensed milk, melted butter, brown sugar, and cinnamon until well combined.

  • Pour the mixture slowly over the cake, allowing it to seep into the holes. Let the cake cool completely.

  • To make the frosting, beat the cream cheese and butter until creamy. Gradually add powdered sugar, then mix in vanilla and cream or milk until smooth and spreadable.

  • Spread the frosting over the cooled cake.

  • Sprinkle cinnamon sugar on top if desired.

  • Chill for at least 30 minutes before serving for best texture.

Notes

  • The cake can be made a day ahead and stored in the fridge.

  • Try using a spice cake mix for extra cinnamon flavor.

  • Allow cake to cool completely before frosting to avoid melting.
