This Cinnamon Sugar Brie and Apple Grilled Cheese is a sweet, savory, and spicy twist on the classic comfort food. Melted brie and crisp apple slices are layered between golden, buttered bread slathered with a warm, chili-spiked honey butter. It’s the perfect balance of creamy, crunchy, sweet, and heat—all in one indulgent sandwich.
Ingredients
Apple Brie Grilled Cheese:

8 slices hearty white country loaf or French bread (sourdough or rye also work well)

2 organic apples, thinly sliced

250 g brie cheese, cut into 12–16 thin slices (about 1 cup)

3 tbsp butter (for spreading on bread)

4 tbsp hot honey butter (recipe below)
Hot Honey Butter:

2 tbsp salted butter, at room temperature

2 tbsp fireweed honey or other mild honey

¼ tsp hot chili flakes (optional, adjust to taste)
Instructions

Make the Hot Honey Butter: In a small bowl, mix softened butter, honey, and chili flakes until well combined. Set aside.

Assemble Sandwiches: Spread regular butter on one side of each slice of bread. On the non-buttered side, layer brie slices and apple slices evenly on 4 slices. Top with remaining bread slices, buttered side out.

Cook the Sandwiches: Heat a non-stick skillet or griddle over medium-low heat. Cook each sandwich for 3–5 minutes per side, pressing gently, until the bread is golden brown and the brie is melted.
- Finish with Hot Honey Butter: While hot, spread or drizzle the hot honey butter over the tops of the sandwiches. Serve immediately.
