Ingredients
For the Pretzels:

2 cups warm milk

1 1/2 tablespoons active dry yeast

1/4 cup brown sugar

4 tablespoons butter, melted

2 teaspoons salt

4 1/2 cups all-purpose flour (more or less as needed)
For the Topping:

1/3 cup baking soda

3 cups warm water (for the baking soda bath)

4 tablespoons butter, melted (for brushing)

1/2 cup granulated sugar

2 teaspoons ground cinnamon
Instructions

In a large bowl, combine the warm milk and yeast. Let sit for 5 minutes until foamy.

Stir in the brown sugar, melted butter, and salt.

Gradually add flour, mixing until a soft dough forms. Knead for 5–7 minutes until smooth and elastic.

Cover the dough and let rise for 1 hour or until doubled in size.

Preheat oven to 450°F (230°C). Line baking sheets with parchment paper.

In a shallow bowl, mix warm water and baking soda for the pretzel bath.

Divide dough into 12 equal portions. Roll each into a rope and shape into pretzels.

Dip each pretzel into the baking soda bath for a few seconds, then place on the prepared baking sheet.

Bake for 8–10 minutes or until golden brown.

Brush each hot pretzel with melted butter, then toss or sprinkle with the cinnamon-sugar mixture.

Notes

If the dough is too sticky, add more flour a little at a time.

You can freeze unbaked pretzels after shaping and bake from frozen (add a few extra minutes to the bake time).
