1 lb fettuccine

3 cloves garlic, finely grated

1 teaspoon freshly ground black pepper, plus more for taste

8 tablespoons butter, divided and cut into small cubes

1 cup heavy cream

½ cup Parmesan cheese, grated, plus more for serving

Kosher salt, to taste

Instructions

Cook Pasta:
Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions until al dente. Reserve 1 cup pasta water and drain pasta. -
Prepare Sauce:
In a large skillet over medium heat, melt 4 tablespoons of the butter. Add grated garlic and cook for 1-2 minutes until fragrant but not browned. -
Add Cream:
Pour in heavy cream and bring to a gentle simmer. Cook, stirring frequently, until slightly thickened, about 4-5 minutes. -
Add Cheese and Butter:
Reduce heat to low. Gradually whisk in Parmesan cheese until smooth. Stir in remaining 4 tablespoons of butter, one cube at a time, stirring until melted and incorporated. -
Season:
Add freshly ground black pepper and kosher salt to taste. Adjust seasoning as needed. -
Combine Pasta and Sauce:
Add cooked fettuccine to the skillet, tossing gently to coat. Add reserved pasta water a little at a time to loosen sauce if needed. - Serve:
Garnish with additional Parmesan and chopped parsley. Serve immediately.
