In a shallow dish, combine cornmeal, flour, paprika, salt, lemon pepper, and cayenne pepper. Mix well. -

Pat fish fillets dry with paper towels. Optionally, season fish lightly with salt and pepper. -
Coat Fish:
Dredge each fish fillet thoroughly in the cornmeal mixture, pressing gently to adhere. -
Heat Oil:
Heat about 1 inch of vegetable oil in a heavy skillet over medium-high heat until it reaches 350°F (175°C). -
Fry Fish:
Carefully add coated fish fillets to the hot oil, cooking 3-5 minutes per side, or until golden brown and cooked through. Do not overcrowd the pan. - Drain and Serve:
