Ingredients
-
½ pound ground beef (85/15)
-
1 cup corn (fresh, frozen, or canned, drained)
-
⅔ cup condensed cream of mushroom soup
-
1 cup shredded cheddar cheese, divided
-
⅓ cup whole milk
-
¼ cup sour cream
-
1 teaspoon onion powder
-
½ teaspoon black pepper
-
½ cup cooked and crumbled bacon
-
32 ounces tater tots (about 4 cups)
Instructions
-
Preheat oven to 375°F (190°C).
-
In a skillet over medium heat, cook ground beef until browned and cooked through. Drain excess fat.
-
Stir in corn, cream of mushroom soup, ½ cup shredded cheddar cheese, milk, sour cream, onion powder, and black pepper. Mix well and heat through.
-
Transfer the beef mixture to a greased 9×13-inch baking dish and spread evenly.

Top with tater tots in a single layer. Sprinkle remaining ½ cup cheddar cheese and crumbled bacon over the tater tots.
-
Bake uncovered for 30–35 minutes or until the tater tots are golden and crispy and the casserole is bubbly.
- Let cool for 5 minutes before serving.
Notes
-
For extra crispiness, broil for 2–3 minutes at the end, watching carefully to avoid burning.
-
Swap cream of mushroom soup for cream of chicken or celery for a flavor twist.
- Add diced onions or bell peppers for extra veggies.
