Description

A hearty, comforting casserole loaded with seasoned ground beef, crispy tater tots, sweet corn, creamy mushroom soup, and melted cheddar cheese, topped with smoky bacon. Perfect for busy weeknights or potlucks.


Ingredients

  • ½ pound ground beef (85/15)

  • 1 cup corn (fresh, frozen, or canned, drained)

  • ⅔ cup condensed cream of mushroom soup

  • 1 cup shredded cheddar cheese, divided

  • ⅓ cup whole milk

  • ¼ cup sour cream

  • 1 teaspoon onion powder

  • ½ teaspoon black pepper

  • ½ cup cooked and crumbled bacon

  • 32 ounces tater tots (about 4 cups)


Instructions

  • Preheat oven to 375°F (190°C).

  • In a skillet over medium heat, cook ground beef until browned and cooked through. Drain excess fat.

  • Stir in corn, cream of mushroom soup, ½ cup shredded cheddar cheese, milk, sour cream, onion powder, and black pepper. Mix well and heat through.

  • Transfer the beef mixture to a greased 9×13-inch baking dish and spread evenly.

  • Top with tater tots in a single layer. Sprinkle remaining ½ cup cheddar cheese and crumbled bacon over the tater tots.

  • Bake uncovered for 30–35 minutes or until the tater tots are golden and crispy and the casserole is bubbly.

  • Let cool for 5 minutes before serving.

Notes

  • For extra crispiness, broil for 2–3 minutes at the end, watching carefully to avoid burning.

  • Swap cream of mushroom soup for cream of chicken or celery for a flavor twist.
