  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 2 1/2 cups chicken broth
  • 1 cup long grain white rice
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Cook the chicken: In a large skillet or Dutch oven, melt the butter over medium heat. Add the diced chicken pieces and cook until browned and fully cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  • Sauté the aromatics: In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic, Italian seasoning, salt, and pepper, and cook for another 1 minute until fragrant.
  • Cook the rice: Add the chicken broth to the skillet and bring to a simmer. Stir in the rice, then reduce the heat to low. Cover the skillet and cook for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Finish the dish: Stir in the heavy cream and Parmesan cheese until the cheese is melted and the sauce is creamy. Add the cooked chicken back into the skillet and mix to combine. Let everything cook for an additional 3-5 minutes until everything is heated through and the sauce is thickened to your liking.
  • Serve: Garnish with freshly chopped parsley, if desired, and serve hot.

Notes

  • You can substitute chicken thighs for the chicken breasts if preferred, though it may take a little longer to cook.
  • For a richer flavor, you can use half-and-half or whole milk instead of heavy cream.
  • If you don’t have fresh Parmesan, you can use pre-grated Parmesan, but freshly grated will give the best flavor and texture.
