Ingredients

1 lb smoked sausage, sliced

12 oz penne pasta

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

½ teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large skillet or pan over medium heat. Add the sliced smoked sausage and cook for 4-5 minutes, or until browned. Remove from the skillet and set aside.

In the same skillet, add the diced onion and cook for 2-3 minutes, or until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Add the heavy cream, chicken broth, Italian seasoning, paprika, salt, and pepper to the skillet. Stir well to combine.

Bring the mixture to a simmer, then add the penne pasta. Cook according to package instructions, stirring occasionally to prevent the pasta from sticking, until the pasta is al dente and the sauce has thickened (about 10-12 minutes).

Once the pasta is cooked, add the cooked smoked sausage back into the skillet. Stir in the shredded mozzarella cheese and cook for an additional 2-3 minutes, or until the cheese is melted and the sauce is creamy.
