Ingredients for Bang Bang Sauce:

  • 1 cup mayonnaise
  • 1/2 cup Thai sweet chili sauce
  • 1 teaspoon Sriracha (or more to taste)
  • 2 tablespoons honey

Ingredients for Chicken:

  • 1 1/2 pounds boneless skinless chicken tenderloins
  • 1 cup buttermilk
  • 3/4 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 large egg (room temperature)
  • 1 tablespoon Sriracha
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 2 cups panko breadcrumbs (plain)
  • Canola oil (for frying)
  • Chopped parsley (for garnish)

Instructions

  1. Make the Bang Bang Sauce:
    In a small bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Mix well and set aside.

  2. Prepare the Chicken:
    In a medium mixing bowl, combine buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, pepper, and cayenne pepper (if using). Whisk to combine. Add the chicken tenders and toss to coat them evenly in the batter.

  3. Coat the Chicken:
    Place the panko breadcrumbs in a shallow plate. Working one piece at a time, remove the chicken from the batter, gently shaking off any excess. Dredge the chicken in the panko breadcrumbs, pressing lightly to adhere. Set on a clean plate. Repeat with the remaining chicken pieces and set aside.

  4. Heat the Oil:
    Heat about an inch of canola oil in a large skillet over medium-high heat. Once the oil reaches 365°F, you are ready to fry the chicken.

  5. Fry the Chicken:
    Working in batches to avoid overcrowding, carefully add the chicken to the skillet. Fry for 2-3 minutes on each side, or until the chicken reaches an internal temperature of 165°F and is golden brown. Transfer the cooked chicken to a paper towel-lined plate to drain any excess oil.

  6. Toss and Serve:
    Once all the chicken is fried, toss it with the prepared Bang Bang sauce. Top with chopped parsley and serve warm.

Notes

  • For extra spice, increase the amount of Sriracha in the sauce or on the chicken.
  • If you prefer a healthier option, you can bake the chicken tenders instead of frying them. Simply coat the chicken with panko and bake at 400°F for 20-25 minutes.
