Ingredients

  • 1 1/2 lb salmon (skin removed), cut into 1-inch cubes
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3/4 teaspoon salt
  • 1 teaspoon ground black pepper
  • 3 tablespoons olive oil, divided
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1/4 cup honey
  • 2 teaspoons sesame seeds
  • 2 teaspoons chopped chives

Instructions

  • Prepare the Salmon

    • Pat the salmon cubes dry with a paper towel to remove excess moisture.
    • Season the salmon with paprika, garlic powder, onion powder, salt, and black pepper.
    • Pour about a tablespoon of olive oil over the salmon and massage the seasoning into the cubes.
  • Cook the Salmon

    • Heat a heavy skillet over medium-high heat and add a tablespoon of olive oil.
    • Add the seasoned salmon cubes in a single layer and cook for 4-5 minutes, flipping them often, until crispy and golden.
    • Transfer the cooked salmon to a plate and set aside. Cook the remaining salmon cubes the same way.
  • Make the Honey Garlic Sauce

    • In the same skillet, add the remaining oil and sauté the garlic and ginger for about 1 minute until fragrant.
    • Stir in the soy sauce, rice vinegar, and honey.
    • Let the sauce simmer for 3-5 minutes until it thickens.
  • Combine the Salmon and Sauce

    • Add the crispy salmon back into the skillet and toss gently to coat with the sauce.
    • Taste and adjust seasonings if necessary.
  • Serve

    • Serve the honey garlic salmon bites over rice, and garnish with sesame seeds and chopped chives. Enjoy!
