For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 cups buttermilk
- 2 tablespoons hot sauce (Frank’s Red Hot preferred)
- 2 large eggs, beaten
- 1 cup flour
- 1 cup panko bread crumbs
- 1 tablespoon Slap Yo Momma seasoning
- ½ tablespoon seasoning salt
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon baking powder
- ½ teaspoon pepper
- Vegetable oil for frying
For the Hot Honey Sauce:
- ½ cup Frank’s Red Hot Sauce
- ¼ cup lemon juice
- ¼ cup honey
- 2 tablespoons butter
- 1 teaspoon Slap Yo Momma seasoning
Instructions
- Marinate the Chicken:
In a large bowl, combine the buttermilk and hot sauce. Add the chicken breasts, making sure they are fully submerged. Cover and refrigerate for at least 1 hour or overnight for more flavor. - Prepare the Breading:
In a shallow bowl, whisk together the flour, panko breadcrumbs, Slap Yo Momma seasoning, seasoning salt, paprika, garlic powder, baking powder, and pepper. Set aside. - Coat the Chicken:
In a separate shallow bowl, beat the eggs. Remove the chicken breasts from the marinade and dip each piece first into the beaten eggs, then into the seasoned flour mixture, making sure they are well-coated. - Fry the Chicken:
Heat vegetable oil in a large skillet over medium-high heat. The oil should be about 350°F (175°C) for frying. Fry the chicken breasts for 6-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove from the skillet and place on a paper towel-lined plate to drain excess oil. - Make the Hot Honey Sauce:
While the chicken is frying, make the hot honey sauce. In a small saucepan, combine Frank’s Red Hot Sauce, lemon juice, honey, butter, and Slap Yo Momma seasoning. Stir over medium heat until the butter is melted and the sauce is smooth. Bring to a simmer, then remove from heat. - Assemble the Sandwich:
To assemble, place each crispy chicken breast on a toasted bun. Drizzle the hot honey sauce generously over the top of the chicken. Add any desired toppings such as pickles, lettuce, or coleslaw. - Serve:
