Description

This Crockpot Honey Garlic Chicken is the perfect combination of sweet and savory! Chicken thighs are slow-cooked in a delicious honey garlic sauce, and with minimal effort, you get tender, flavorful shredded chicken that’s perfect for any meal.


Ingredients

  • 2 lbs boneless, skinless chicken thighs

For the Sauce:

  • ½ cup soy sauce
  • ⅓ cup honey
  • ¼ cup ketchup (or tomato sauce)
  • 4 cloves garlic, minced
  • 2 teaspoons fresh ginger, grated
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  • In a medium bowl, combine the soy sauce, honey, ketchup, garlic, grated ginger, and crushed red pepper flakes. Whisk together until well mixed.
  • Place the chicken thighs in the crockpot in a single layer. Pour the sauce over the chicken, making sure it’s evenly coated.
  • Cover and cook on high for 3½ hours or low for 6-7 hours, until the chicken is fully cooked and tender.
  • About 15 minutes before serving, remove the chicken from the crockpot and place it in a large bowl.
  • In a small bowl, mix the cornstarch with cold water until smooth. Pour this mixture into the crockpot, stirring it into the sauce. Cover and cook for an additional 15 minutes to thicken the sauce.
  • While the sauce thickens, shred the chicken using an electric mixer or two forks.
  • Once the sauce has thickened, add the shredded chicken back to the crockpot. Cook for an additional 5 minutes to heat through.
  • Serve the honey garlic chicken hot, paired with rice, veggies, or on a sandwich.

Notes

  • For extra flavor, serve with steamed rice or sautéed veggies.
  • If you want a spicier kick, add more crushed red pepper flakes or chili paste.
