Description

This easy Crockpot Sausage and Peppers recipe brings together savory Italian sausage, sweet bell peppers, and onions in a rich marinara sauce. Perfect for a busy weeknight, this slow-cooked meal is packed with flavor and makes a delicious topping for pasta, a hearty sandwich, or served on its own.


Ingredients

  • 2 pounds Italian sausage links (about 810 sausages)

  • 1 green pepper, thinly sliced

  • 1 red pepper, thinly sliced

  • 1 yellow pepper, thinly sliced

  • 1 large onion, thinly sliced

  • 2 cloves garlic, finely minced

  • Salt, to taste

  • Pepper, to taste

  • 1 teaspoon Italian seasoning

  • ¼ teaspoon red chili flakes (optional)

  • 2 cups marinara sauce

  • 1 tablespoon fresh parsley, roughly chopped


Instructions

  • Place the Italian sausage links at the bottom of the crockpot.

  • Add the sliced green, red, and yellow peppers, along with the onion and minced garlic, on top of the sausages.

  • Sprinkle with salt, pepper, Italian seasoning, and red chili flakes (if using).

  • Pour the marinara sauce over the top of the vegetables and sausages.

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the sausages are cooked through and the peppers are tender.

  • Once cooked, remove the sausages and slice them into rounds.

  • Return the sliced sausages to the crockpot and stir everything together.

  • Garnish with freshly chopped parsley and serve hot.

Notes

  • For a spicier dish, increase the amount of red chili flakes or use hot Italian sausage.
