Ingredients
Scale
- 3 tomatoes, diced
- 3 cucumbers, peeled and sliced
- 1 onion, thinly sliced
- ½ cup vinegar (white or apple cider vinegar works well)
- 1 teaspoon cracked pepper
- 2 tablespoons sugar
- 2 teaspoons salt
- 1 cup water
- ¼ cup olive oil
Instructions
- In a large bowl, combine the diced tomatoes, sliced cucumbers, and thinly sliced onion.
- In a separate bowl or jar, whisk together the vinegar, cracked pepper, sugar, salt, water, and olive oil until the sugar and salt are dissolved.
- Pour the dressing over the vegetables and toss gently to combine.
- Let the salad sit for at least 15-20 minutes in the fridge to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- This salad can be made a few hours ahead of time and stored in the refrigerator. The flavors will develop even more as it sits.
- You can adjust the sweetness or tanginess of the dressing by adding more sugar or vinegar to taste.
- For extra flavor, try adding a sprinkle of fresh herbs like parsley or dill before serving.
