  • 23 tbsp low sodium soy sauce
  • 1 cup peas
  • Green onions for garnish (optional)

Instructions

  • Heat the butter in a large skillet over medium-high heat until melted.
  • Add the diced carrots and onions, sautéing for 4-5 minutes, or until tender.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the curry powder to the pan and sauté for 1 minute, allowing the spices to bloom and become fragrant.
  • Add the chilled rice to the pan, stirring to coat the rice in the spices and toast it slightly.
  • Stir in the soy sauce and peas, cooking for another 2-3 minutes until the peas are heated through and the flavors are well combined.
  • Serve immediately, garnished with green onions if desired.
