- 4 cups cooked and chilled rice
- 2–3 tbsp low sodium soy sauce
- 1 cup peas
- Green onions for garnish (optional)
Instructions
- Heat the butter in a large skillet over medium-high heat until melted.
- Add the diced carrots and onions, sautéing for 4-5 minutes, or until tender.
- Stir in the minced garlic and cook for an additional minute.
- Add the curry powder to the pan and sauté for 1 minute, allowing the spices to bloom and become fragrant.
- Add the chilled rice to the pan, stirring to coat the rice in the spices and toast it slightly.
- Stir in the soy sauce and peas, cooking for another 2-3 minutes until the peas are heated through and the flavors are well combined.
- Serve immediately, garnished with green onions if desired.
Notes
- Use day-old rice for the best texture in fried rice, as it helps prevent clumping.
- Adjust the amount of curry powder depending on how spicy or mild you prefer the dish.
