Indulge in these rich, decadent Lindt chocolate fondants that are perfect for a romantic dessert or special occasion. Made with 70% cocoa Lindt dark chocolate, these individual molten lava cakes are a treat, with a gooey, molten center and a beautiful chocolate flavor.


Ingredients

  • 2 oz (60g) Lindt dark chocolate (70% cocoa preferred), chopped
  • 2 tablespoons (30g) unsalted butter, plus extra for greasing
  • 2 tablespoons (25g) granulated sugar
  • 1 large egg
  • 1 tablespoon (15g) all-purpose flour
  • ½ teaspoon vanilla extract
  • A pinch of salt
  • Optional: cocoa powder or powdered sugar, for dusting

Instructions

  • Preheat the oven to 425°F (220°C). Grease two ramekins (6 oz size) with butter and lightly dust them with cocoa powder or flour to prevent sticking.
  • In a heatproof bowl, melt the chopped Lindt dark chocolate and butter together. You can do this over a double boiler or in the microwave in short bursts, stirring in between, until smooth.
  • Once melted, remove the bowl from the heat and stir in the sugar, egg, vanilla extract, and salt until fully combined.
  • Sift the flour over the mixture and fold it in gently until smooth.
  • Pour the batter evenly into the prepared ramekins.
  • Place the ramekins in the preheated oven and bake for 12-14 minutes. The edges should be set, but the center should still be soft and slightly jiggly.
  • Remove from the oven and allow the fondants to rest for 1-2 minutes before carefully inverting them onto serving plates.
  • Optional: Dust with cocoa powder or powdered sugar before serving.

Notes

  • If you prefer a more gooey center, reduce the baking time slightly.
  • These fondants are best served immediately, as the molten center will start to set over time.
  • Serve with a scoop of vanilla ice cream or fresh berries for a delightful contrast.
