Description

Delightful and festive Easter Birds Nest Cookies are quick and easy to make, combining crunchy chow mein noodles with creamy chocolate, butterscotch, and peanut butter, topped with colorful candy eggs — perfect for spring celebrations or a fun treat for kids.


Ingredients

  • 1 cup milk chocolate chips (180g)

  • ½ cup butterscotch chips (90g)

  • 2 tablespoons creamy peanut butter (40g)

  • 2½ cups chow mein noodles (150g)

  • 36 candy eggs (such as mini chocolate eggs)


Instructions

  • In a large microwave-safe bowl, combine the milk chocolate chips, butterscotch chips, and peanut butter. Microwave in 30-second intervals, stirring well after each, until fully melted and smooth.

  • Gently fold in the chow mein noodles until they are evenly coated with the chocolate mixture.

  • Spoon the mixture into muffin tins or on a parchment-lined baking sheet, shaping into nest-like mounds.

  • Place 3 candy eggs on top of each nest while the mixture is still soft.

  • Refrigerate the nests for at least 30 minutes or until firm.

  • Once set, remove from the tin or baking sheet and serve.

Notes

  • For a nut-free version, substitute the peanut butter with sunflower seed butter or omit it entirely.

  • You can use different types of candy eggs or even small jelly beans as decoration.
