Ingredients
Scale
For the Soup:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon red pepper flakes (optional)
- 1 (28-ounce) can crushed tomatoes
- 4 cups chicken broth
- 2 cups cooked, shredded chicken
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup small pasta (such as ditalini or elbow macaroni)
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- ¼ cup chopped fresh parsley or basil (for garnish)
- ½ cup panko breadcrumbs (optional, for topping)
Instructions
- Cook the Vegetables:
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.
- Add the minced garlic, oregano, basil, and red pepper flakes (if using). Cook for another 1 minute, stirring frequently.
- Prepare the Soup:
- Add the crushed tomatoes and chicken broth to the pot, stirring to combine.
- Bring the mixture to a simmer, then add the shredded chicken, salt, and pepper. Stir and let the soup simmer for 10 minutes to blend the flavors.
- Cook the Pasta:
- Add the pasta to the simmering soup and cook for 8-10 minutes, or until the pasta is tender.
- Add the Cheese:
- Stir in the grated Parmesan cheese and shredded mozzarella cheese. Continue to cook for 2-3 minutes until the cheese is melted and the soup is creamy.
- Prepare the Topping (optional):
- If using panko breadcrumbs, heat a small skillet over medium heat. Add the panko breadcrumbs and toast them for 2-3 minutes, stirring constantly, until they are golden brown and crispy.
- Serve:
- Ladle the soup into bowls. Garnish with the crispy panko breadcrumbs (if using) and chopped fresh parsley or basil.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- If you prefer a thicker soup, you can reduce the amount of chicken broth or add extra cheese to make it creamier.
- For extra flavor, try adding a splash of heavy cream to make the soup richer and creamier.
