Instructions

  • Cook the Vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.
    • Add the minced garlic, oregano, basil, and red pepper flakes (if using). Cook for another 1 minute, stirring frequently.
  • Prepare the Soup:
    • Add the crushed tomatoes and chicken broth to the pot, stirring to combine.
    • Bring the mixture to a simmer, then add the shredded chicken, salt, and pepper. Stir and let the soup simmer for 10 minutes to blend the flavors.
  • Cook the Pasta:
    • Add the pasta to the simmering soup and cook for 8-10 minutes, or until the pasta is tender.
  • Add the Cheese:
    • Stir in the grated Parmesan cheese and shredded mozzarella cheese. Continue to cook for 2-3 minutes until the cheese is melted and the soup is creamy.
  • Prepare the Topping (optional):
    • If using panko breadcrumbs, heat a small skillet over medium heat. Add the panko breadcrumbs and toast them for 2-3 minutes, stirring constantly, until they are golden brown and crispy.
