Description

This Easy Corn Casserole is the ultimate comfort food! Combining the sweetness of corn with a creamy, buttery texture, it’s a perfect side dish for any occasion. With just a few simple ingredients, it’s quick to make and loved by everyone.


Ingredients

  • 1 box (8 oz) Jiffy Corn Muffin Mix (dry mix only)

  • 15 ounces whole kernel corn (drained)

  • 15 ounces creamed corn (do not drain)

  • 1 cup sour cream

  • 1/2 cup melted butter

Instructions

  • Preheat your oven to 350°F (175°C).

  • In a large bowl, combine the Jiffy Corn Muffin Mix, whole kernel corn, creamed corn, sour cream, and melted butter. Stir until well mixed.

  • Pour the mixture into a greased 9×9-inch baking dish or a similar-sized casserole dish.

  • Bake for 45–50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  • Let it cool for a few minutes before serving.

Notes

  • For a richer flavor, add shredded cheese on top during the last 10 minutes of baking.

  • This casserole can be made ahead and stored in the fridge for up to 2 days before baking.
