Description

Egg Roll Stir Fry is a healthy, flavorful, and quick dish that captures all the deliciousness of an egg roll without the deep-frying. Made with ground meat, cabbage, carrots, and a savory sauce, this dish is light, satisfying, and perfect for busy weeknights.

  • 1 pound ground meat (chicken, turkey, or pork)
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 medium head of green cabbage, thinly sliced
  • 2 medium carrots, shredded
  • ¼ cup soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Optional: sesame seeds for garnish

Instructions

  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground meat and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  • Add the chopped onion, garlic, and grated ginger to the skillet. Cook for 2-3 minutes, or until the onion becomes translucent and the garlic is fragrant.
  • Add the shredded cabbage and carrots to the skillet. Stir-fry for 5-7 minutes, until the cabbage softens and reduces in volume.
  • In a small bowl, whisk together the soy sauce, sesame oil, and rice vinegar. Pour this sauce over the meat and vegetables. Stir well to coat everything evenly.
  • If you like some heat, add the crushed red pepper flakes to the skillet and mix.
  • Cook for another 2-3 minutes, allowing the sauce to thicken slightly and everything to be heated through.
  • Garnish with sliced green onions and optional sesame seeds before serving.
