Description

These English Muffin Breakfast Pizzas are a fun and delicious way to start your day! With fluffy scrambled eggs, crispy bacon bits, and a blend of mozzarella and cheddar cheese, all piled on top of English muffins and topped with zesty chili sauce, these mini breakfast pizzas are perfect for a hearty breakfast or brunch.

  • 1/4 cup heavy cream

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 teaspoon onion powder

  • 3/4 cup real bacon bits

  • 6 English muffins

  • 1/2 cup Heinz chili sauce

  • 1 1/2 cups shredded mozzarella and cheddar cheese blend


Instructions

  • Prepare the Muffins:

    • Preheat the oven to 375°F (190°C).

    • Slice the English muffins in half and place them on a baking sheet, cut side up.

  • Make the Egg Mixture:

    • In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and onion powder until smooth.

    • Pour the egg mixture into a large skillet over medium heat. Stir gently, cooking the eggs until they are scrambled and fully cooked. Remove from heat.

  • Assemble the Breakfast Pizzas:

    • Spoon the scrambled eggs evenly onto each English muffin half.

    • Top with a generous portion of bacon bits, then drizzle with Heinz chili sauce.

    • Sprinkle the shredded mozzarella and cheddar cheese blend over the top.

  • Bake the Pizzas:

    • Place the muffin halves in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

 

  • Serve:

    • Remove from the oven and serve hot. You can garnish with additional bacon bits or herbs, if desired.

Notes

  • Feel free to swap the bacon bits for cooked sausage, ham, or vegetables like bell peppers or spinach for a different flavor.

  • If you prefer, you can toast the English muffins before adding the toppings for a crispy base.
