Description

  • 3 tbsp cottage cheese (full-fat or low-fat)
  • 1/4 tsp cream of tartar
  • 1/4 tsp salt
  • 1 tsp honey or sugar (optional, for a touch of sweetness)

Instructions

  • Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Prepare the egg whites: In a clean, dry bowl, beat the egg whites with the cream of tartar until stiff peaks form. This will take about 3-5 minutes using an electric mixer.
  • Prepare the egg yolk mixture: In a separate bowl, whisk together the egg yolks, cottage cheese, salt, and honey (if using) until smooth and well combined.
  • Gently fold the egg yolk mixture into the beaten egg whites using a spatula. Be careful not to deflate the egg whites too much—fold until just combined.
  • Spoon the batter onto the prepared baking sheet in small rounds, about 2-3 inches in diameter. You should be able to make around 6-8 pieces, depending on the size.
  • Bake for 25-30 minutes, or until the bread is golden and firm to the touch. Let the cloud bread cool for a few minutes before carefully removing it from the baking sheet.
  • Serve as a sandwich base or enjoy with your favorite spread!
