- 1/4 tsp salt

Instructions
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the egg whites: In a clean, dry bowl, beat the egg whites with the cream of tartar until stiff peaks form. This will take about 3-5 minutes using an electric mixer.
- Prepare the egg yolk mixture: In a separate bowl, whisk together the egg yolks, cottage cheese, salt, and honey (if using) until smooth and well combined.
- Gently fold the egg yolk mixture into the beaten egg whites using a spatula. Be careful not to deflate the egg whites too much—fold until just combined.
- Spoon the batter onto the prepared baking sheet in small rounds, about 2-3 inches in diameter. You should be able to make around 6-8 pieces, depending on the size.
- Bake for 25-30 minutes, or until the bread is golden and firm to the touch. Let the cloud bread cool for a few minutes before carefully removing it from the baking sheet.
- Serve as a sandwich base or enjoy with your favorite spread!
