Description

Ingredients

  • 1/4 cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon Gold potatoes, cut into 1/2-inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt (plus more to taste)
  • 1/4 teaspoon ground black pepper (plus more to taste)
  • 1 1/4 lb sirloin steak, cut into 1/2-inch cubes
  • Freshly chopped parsley (for garnish)

Instructions

  • Prep the Ingredients

    • Heat a large cast iron skillet over medium heat.
    • Add the olive oil and two tablespoons of the ghee to the pan.
  • Cook the Potatoes

    • Once the ghee is melted, add the potatoes.
    • Sprinkle the garlic, thyme, oregano, salt, and pepper over the potatoes.
    • Cook for 2-3 minutes before stirring.
    • Stir the potatoes and continue to cook until they are golden brown and fork-tender (about 8-10 minutes), stirring frequently to prevent sticking.
    • Remove the potatoes from the pan, along with the browned bits, and set them aside.
  • Sear the Steak

    • Increase the heat to medium-high and add the remaining two tablespoons of ghee to the pan.
    • Once melted, add the steak pieces and season with a dash of salt and pepper.
    • Cook the steak pieces for at least 2 minutes before stirring.
    • Stir and cook until the steak is golden brown, about 1-2 minutes.
  • Combine and Finish

    • Add the cooked potatoes back into the pan with the steak.
    • Stir to combine and cook for an additional 1-2 minutes.
    • Add more salt and pepper to taste.
    • Top with freshly chopped parsley.
  • Serve

    • Serve hot and enjoy!

Notes

  • You can use other small potato varieties such as yellow, red, or fingerling potatoes.
  • Make sure to cut the potatoes small and evenly to ensure they cook quickly and evenly.
  • Resist the urge to stir the steak too early to allow it to sear properly before stirring.
