Description

Crispy on the outside and tender on the inside, these traditional German potato pancakes (Reibekuchen) are a delicious comfort food. With simple ingredients like potatoes, onions, and a bit of flour, these savory pancakes are perfect for breakfast, brunch, or as a side dish to any meal.


Ingredients

  • 1 lb russet potatoes

  • 1 small yellow onion

  • Pinch of salt (plus more for seasoning)

  • Pinch of black pepper (for savory pancakes)

  • 3 tablespoons all-purpose flour

  • 1 large egg

  • Vegetable oil (for frying)


Instructions

  • Peel the russet potatoes and grate them finely using a box grater or food processor.

  • Place the grated potatoes into a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible.

  • Grate the onion and add it to the potatoes in a mixing bowl.

  • Season with a pinch of salt and black pepper, then stir in the flour and egg until the mixture is well combined.

  • Heat a large skillet over medium-high heat and add vegetable oil to coat the bottom of the pan.

  • Take spoonfuls of the potato mixture and flatten them into round pancake shapes in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy.

  • Once cooked, transfer the pancakes to a paper towel-lined plate to drain excess oil.

 

  • Serve immediately with applesauce, sour cream, or your favorite dipping sauce.

Notes

  • To keep the pancakes crispy, avoid stacking them on top of each other. Instead, serve immediately or keep them warm in a single layer in a low oven.

  • You can add chopped fresh herbs like parsley or chives to the potato mixture for extra flavor.
