A hearty, flavorful casserole with seasoned ground turkey, tender sweet potatoes, black beans, and a cheesy topping. This dish is a perfect combination of comfort food and healthy ingredients. Great for a family meal or a make-ahead dinner.
Ingredients
For the Casserole:

1 tablespoon olive oil

1 pound ground turkey

1 small onion, diced

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder (optional)

1 (15 oz) can black beans, drained and rinsed

1 (10 oz) can diced tomatoes with green chilies (Rotel)

1 1/2 cups baby spinach (optional, for extra greens)

2 medium sweet potatoes, peeled and diced

1/2 cup chicken broth (or water)
For the Topping:

1 cup shredded cheddar cheese (or Mexican blend)

1/2 cup crumbled feta or cotija cheese (optional)

1/4 cup chopped fresh cilantro (for garnish)
Instructions

Preheat the oven to 375°F (190°C).

Heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic, cooking until softened, about 3-4 minutes.

Add the ground turkey to the skillet, breaking it up as it cooks. Cook until browned and fully cooked through, about 6-8 minutes.

Stir in the salt, black pepper, smoked paprika, cumin, and chili powder (if using).

Add the black beans, diced tomatoes with green chilies, and spinach (if using). Mix well and simmer for 5 minutes to combine the flavors.

While the turkey mixture is simmering, place the diced sweet potatoes in a separate saucepan with the chicken broth (or water). Bring to a boil, then reduce to a simmer and cook until the sweet potatoes are tender, about 10-12 minutes.

Once the sweet potatoes are cooked, drain any excess liquid and add the sweet potatoes to the turkey mixture. Stir until everything is well combined.

Transfer the casserole mixture to a greased 9×13-inch baking dish.

Sprinkle the shredded cheddar cheese (and crumbled feta or cotija, if using) evenly over the top.

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped fresh cilantro before serving.
Notes

You can add more greens by increasing the amount of spinach, or swap in kale or another leafy green.

- To make it dairy-free, omit the cheese or use a dairy-free cheese alternative.
