Description

A hearty, flavorful casserole with seasoned ground turkey, tender sweet potatoes, black beans, and a cheesy topping. This dish is a perfect combination of comfort food and healthy ingredients. Great for a family meal or a make-ahead dinner.

For the Casserole:

  • 1 tablespoon olive oil

  • 1 pound ground turkey

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon cumin

  • 1/2 teaspoon chili powder (optional)

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 (10 oz) can diced tomatoes with green chilies (Rotel)

  • 1 1/2 cups baby spinach (optional, for extra greens)

  • 2 medium sweet potatoes, peeled and diced

  • 1/2 cup chicken broth (or water)

For the Topping:

  • 1 cup shredded cheddar cheese (or Mexican blend)

  • 1/2 cup crumbled feta or cotija cheese (optional)

  • 1/4 cup chopped fresh cilantro (for garnish)


Instructions

  • Preheat the oven to 375°F (190°C).

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic, cooking until softened, about 3-4 minutes.

  • Add the ground turkey to the skillet, breaking it up as it cooks. Cook until browned and fully cooked through, about 6-8 minutes.

  • Stir in the salt, black pepper, smoked paprika, cumin, and chili powder (if using).

  • Add the black beans, diced tomatoes with green chilies, and spinach (if using). Mix well and simmer for 5 minutes to combine the flavors.

  • While the turkey mixture is simmering, place the diced sweet potatoes in a separate saucepan with the chicken broth (or water). Bring to a boil, then reduce to a simmer and cook until the sweet potatoes are tender, about 10-12 minutes.

  • Once the sweet potatoes are cooked, drain any excess liquid and add the sweet potatoes to the turkey mixture. Stir until everything is well combined.

  • Transfer the casserole mixture to a greased 9×13-inch baking dish.

  • Sprinkle the shredded cheddar cheese (and crumbled feta or cotija, if using) evenly over the top.

  • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

  • Remove from the oven and garnish with chopped fresh cilantro before serving.

Notes

  • You can add more greens by increasing the amount of spinach, or swap in kale or another leafy green.

  • This dish can easily be made ahead and stored in the fridge for up to 3 days.

  • To make it dairy-free, omit the cheese or use a dairy-free cheese alternative.
