Packed with hash browns, cheese, ham, and eggs, it’s a satisfying meal that’s simple to prepare and can be customized with your favorite add-ins. The combination of sharp cheddar and Monterey Jack cheeses gives this casserole a deliciously cheesy flavor, while the eggs and ham make it filling and tasty.
Ingredients
-
8 precooked frozen hash brown patties (no need to thaw)
-
1 cup shredded sharp cheddar cheese
-
1 cup shredded Monterey Jack cheese
-
1 ½ cups diced leftover ham (about ¾ pound)
-
2 scallions, diced
-
9 large eggs
-
1 cup whole milk
-
½ teaspoon salt
-
½ teaspoon dry ground mustard (optional, but recommended)
-
¼ teaspoon garlic powder
Instructions
-
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a similar-sized casserole dish. -
Layer the Hash Browns:
Place the frozen hash brown patties in the bottom of the prepared baking dish, arranging them evenly. You can break up the patties to fit them more snugly if needed. -
Add the Ham and Scallions:
Sprinkle the diced ham evenly over the hash brown patties. Then, scatter the diced scallions on top of the ham. -
Prepare the Egg Mixture:
In a large bowl, whisk together the eggs, milk, salt, ground mustard (if using), and garlic powder. Mix until the ingredients are fully combined. -
Assemble the Casserole:
Pour the egg mixture evenly over the hash brown, ham, and scallion layers in the casserole dish. Make sure the egg mixture is evenly distributed. -
Top with Cheese:
Sprinkle the shredded cheddar and Monterey Jack cheeses over the top of the casserole. -
Bake:
Bake the casserole in the preheated oven for 40-45 minutes, or until the eggs are set and the cheese is melted and bubbly. The top should be golden brown, and a toothpick inserted into the center should come out clean.
-
Serve:
Allow the casserole to cool for a few minutes before slicing and serving. It’s great on its own or with a side of fresh fruit or a light salad.
Notes
-
Feel free to add other vegetables, such as bell peppers, spinach, or mushrooms, for extra flavor and nutrition.
-
If you don’t have leftover ham, you can use cooked bacon or sausage instead.
- This casserole can be made ahead of time by assembling it the night before and refrigerating it overnight. Just bake it in the morning when you’re ready to serve.
