Description

This refreshing Hawaiian Pasta Salad is a delightful mix of sweet pineapple, savory ham (optional), and crunchy veggies tossed in a creamy, tangy dressing. Perfect for summer barbecues, picnics, or potlucks, it brings tropical flavors to your plate in every bite.


Ingredients

  • 1 pound pasta (gluten-free if needed)

  • 1 cup pineapple, diced

  • 1 cup ham, diced (optional)

  • 1 cup red bell pepper, diced

  • 1 cup carrot, grated or shredded

  • 1/4 cup red onion, grated

  • 1/4 cup green onion, thinly sliced

  • 1/2 cup mayonnaise

  • 1/4 cup pineapple juice

  • 2 tablespoons apple cider vinegar

  • 2 teaspoons sugar (optional)

  • Salt and freshly ground black pepper, to taste


Instructions

  • Cook the Pasta:

    • Cook the pasta according to package instructions. Once done, drain and rinse with cold water to cool it down. Set aside.

  • Prepare the Salad Ingredients:

    • In a large bowl, combine the cooled pasta, diced pineapple, diced ham (if using), red bell pepper, grated carrot, red onion, and green onion.

  • Make the Dressing:

    • In a small bowl, whisk together the mayonnaise, pineapple juice, apple cider vinegar, and sugar (if using). Season with salt and pepper to taste.

  • Assemble the Salad:

    • Pour the dressing over the pasta and veggie mixture. Toss everything together until evenly coated.

 

  • Chill and Serve:

    • Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled and enjoy!

Notes

  • You can make this salad ahead of time; it stores well in the fridge for up to 2 days.

  • For a lighter version, swap the mayonnaise for Greek yogurt.

  • You can also add diced grilled chicken or shrimp for extra protein.
